It's funny, I've discussed writing about our virtualization and email infrastructure automation with my employer a couple of days ago. It would be something for our technical blog, but it should be easy to modify for usage as documentation for DebOps. Our clustered, highly available email infrastructure is extreme overkill for the amount of mail that flows through it. That's because we're trying to eat more of our proverbial dog food. It would however be a nice showcase of what's possible with DebOps.
